Apple Juice – Adds sweetness and subtle apple flavor.Vegetable Broth – This makes the soup vegetarian if that matters to you, but you can also use chicken broth or make your own homemade bone broth.If you like, you can substitute it with canned sweet potato puree for a similar taste and consistency. Pumpkin Puree – Adds a rich and creamy texture, and pumpkin flavor.Alternatively, you can also use roasted butternut squash for a deeper, caramelized flavor in the soup. Look for squash that feels heavy for its size, which means it’s fresh and ripe, and cut it into cubes.
